Banana Protein Pancakes

Ingredients
- 1 ripe banana, mashed
- 2 large eggs
- 1 scoop (30g) vanilla whey protein
- 1/3 cup rolled oats
- 1/4 tsp baking powder
- Pinch of cinnamon
- 1 tsp coconut oil for cooking
Instructions
- Mash banana thoroughly in a bowl.
- Add eggs, protein powder, oats, baking powder, and cinnamon; mix into a thick batter.
- Heat a non-stick pan over medium-low heat and grease with coconut oil.
- Pour small rounds (2 tbsp each) and cook 2-3 minutes until bubbles form on top.
- Flip and cook 1-2 minutes more.
- Stack and serve with a drizzle of honey or fresh berries.
