Indian Masala Omelette

Ingredients
- 3 large eggs
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chili, minced
- 2 tbsp fresh coriander, chopped
- 1/4 tsp turmeric
- 1/2 tsp chaat masala
- Salt and black pepper
- 1 tsp oil
Instructions
- Crack eggs into a bowl and beat well with salt, pepper, and turmeric.
- Stir in onion, tomato, chili, coriander, and chaat masala.
- Heat oil in a non-stick pan over medium-high heat.
- Pour in the egg mixture and let it set at the edges for 1 minute.
- Fold in half and press gently; cook 2 minutes more.
- Serve immediately with whole-grain toast if needed.
