Mediterranean Egg and Feta Wrap

Ingredients
- 3 large eggs
- 30g feta cheese, crumbled
- 5 kalamata olives, sliced
- 2 tbsp sun-dried tomatoes, chopped
- 1 cup baby spinach
- 1 large spinach or whole-wheat tortilla
- Salt, black pepper, and dried oregano
Instructions
- Scramble eggs in a lightly oiled pan over medium heat until softly set.
- Add spinach and stir until wilted.
- Remove from heat; fold in feta, olives, sun-dried tomatoes, and oregano.
- Warm tortilla in a dry pan 30 seconds.
- Fill with the egg mixture, roll tightly, and slice on the diagonal.
