Sattu Paratha with Curd
Bihar's original desi-protein breakfast: whole-wheat parathas stuffed with mustard-spiked roasted chana flour, at a fraction of the cost of whey. Carb-forward at 52g with moderate protein, it works best as morning fuel before an active day rather than as a cutting-phase pick.
Ingredients
- 3/4 cup whole wheat flour
- 1/3 cup sattu (roasted chana flour)
- 1 small onion, finely chopped
- 1 green chili, minced
- 1/4 tsp ajwain (carom seeds)
- 1 tsp mustard oil
- 150g curd, to serve
Instructions
- Knead the wheat flour with water into a soft dough and rest it.
- Mix sattu with onion, chili, ajwain, mustard oil, and a splash of water into a crumbly stuffing.
- Stuff dough balls with the sattu mix and roll into parathas.
- Cook on a hot tawa with a light brush of ghee until blistered on both sides.
- Serve hot with the bowl of curd.
