Shakshuka with Feta
Eggs poached directly in a smoky pepper-and-tomato sauce, finished with crumbled feta and eaten straight from the pan. Low-carb with a big plate of saucy volume for 340 calories, it's a satisfying maintenance breakfast that skips the bread without feeling like it.
Ingredients
- 3 eggs
- 1 red capsicum, sliced
- 2 tomatoes, chopped
- 1/2 onion, sliced
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 30g feta, crumbled
- 1 tbsp olive oil
Instructions
- Soften the onion, capsicum, and garlic in olive oil.
- Add tomatoes and paprika and simmer into a thick sauce.
- Make three wells and crack in the eggs.
- Cover and poach 5-6 minutes until the whites set.
- Scatter with feta and serve in the pan.
