  1. Beat eggs with a pinch of black pepper.
  2. Melt butter in a non-stick pan over low heat.
  3. Add eggs and stir continuously with a spatula using slow, folding strokes.
  4. When eggs are still slightly underdone, remove from heat.
  5. Fold in cream cheese and smoked salmon off the heat.
  6. Garnish with chives and serve immediately.
