Smoked Salmon Egg Scramble
Silky soft-scrambled eggs folded through with flakes of cold-smoked salmon and a handful of chives, finished with cream cheese stirred in at the end. At 30g protein and only 8g carbs for 340 calories, this is a premium low-carb fat-loss breakfast with excellent omega-3 content from the salmon.
Ingredients
- 3 large eggs
- 60g smoked salmon, torn into pieces
- 1 tbsp light cream cheese
- 1 tbsp chives, chopped
- Black pepper
- 1 tsp butter
Instructions
- Beat eggs with a pinch of black pepper.
- Melt butter in a non-stick pan over low heat.
- Add eggs and stir continuously with a spatula using slow, folding strokes.
- When eggs are still slightly underdone, remove from heat.
- Fold in cream cheese and smoked salmon off the heat.
- Garnish with chives and serve immediately.
