Turkish Menemen with Whole-Grain Pita
Soft-scrambled eggs folded through slow-cooked tomatoes and green peppers, mopped up with warm whole-grain pita. Its balanced macros and saucy volume make it a relaxed maintenance breakfast rather than a targeted cutting or bulking meal.
Ingredients
- 3 eggs
- 2 ripe tomatoes, grated
- 1 green pepper, finely chopped
- 1/2 onion, finely chopped
- 1 tbsp olive oil
- 1/2 tsp chili flakes
- 1 small whole-grain pita
Instructions
- Soften the onion and pepper in olive oil.
- Add the grated tomato and cook down until jammy.
- Pour in the beaten eggs and stir gently until barely set.
- Season with chili flakes and serve with warm pita.
