Egg & Bean Breakfast Quesadilla
A whole-wheat tortilla folded around scrambled eggs, refried beans, and melted cheese, toasted until crisp and cut into wedges. Calorie-dense and evenly split across macros, it's better suited to a bulking breakfast or a pre-long-day start than a cutting plan.
Ingredients
- 1 large whole-wheat tortilla
- 2 eggs, scrambled
- 1/3 cup refried beans
- 30g cheddar, grated
- 2 tbsp salsa
- 1 spring onion, sliced
- 1 tsp oil
Instructions
- Scramble the eggs softly and set aside.
- Spread the tortilla with refried beans, then layer eggs, cheese, and spring onion over one half.
- Fold and toast in a lightly oiled pan 2-3 minutes per side until golden.
- Cut into wedges and serve with salsa.
