Chhana Protein Barfi
Fresh chhana kneaded with chocolate whey and stevia, set and cut into barfi squares — the best protein-to-carb ratio of any mithai in the current protein-sweets wave. With 33g protein against just 4g carbs, it's essentially a protein bar disguised as festival sweet, perfect after a heavy lift.
Ingredients
- 1 litre milk (for fresh chhana)
- 2 tbsp vinegar or lemon juice
- 1 scoop chocolate whey protein
- Stevia to taste
- 1/4 tsp cardamom powder
Instructions
- Boil the milk, curdle it with vinegar, and strain through muslin.
- Rinse and press the chhana to remove the whey water.
- Knead the chhana smooth with chocolate whey, stevia, and cardamom.
- Press into a lined tray and set in the fridge for 2 hours.
- Cut into squares and store chilled.
