Chicken Fajita Meal Prep Bowl
A classic, easy-to-prep fajita bowl that stores perfectly in the fridge for a week of lunches.
Ingredients
- 1.5 lbs chicken breast, sliced
- 2 bell peppers, sliced
- 1 large onion, sliced
- 2 tbsp fajita seasoning
- 2 cups cooked brown rice
- 1/2 cup black beans
Instructions
- Toss chicken, peppers, and onions in fajita seasoning and a little oil.
- Roast on a sheet pan at 400°F for 20 minutes.
- Divide rice and black beans into four meal prep containers.
- Top with the roasted chicken and vegetables.
