Edamame & Soba Noodle Salad
A cold, refreshing noodle salad packed with plant protein and complex carbohydrates.
Ingredients
- 6 oz soba (buckwheat) noodles
- 1 cup shelled edamame
- 1 red bell pepper, julienned
- 1 carrot, shredded
- 3 tbsp soy sauce or tamari
- 1 tbsp sesame oil
Instructions
- Boil the soba noodles according to package directions. Rinse under cold water.
- In a large bowl, toss the cold noodles with edamame, bell pepper, and carrot.
- Whisk the soy sauce and sesame oil together.
- Pour dressing over the noodle salad and toss well.
- Serve chilled.
