Lean Chicken & Quinoa Salad
A massive, filling salad that is low in calories but huge in volume, perfect for staying full on a cut.
Ingredients
- 8 oz chicken breast, grilled and diced
- 1/2 cup cooked quinoa
- 4 cups mixed greens (spinach, arugula, lettuce)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 2 tbsp light balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Season and grill the chicken breast until fully cooked. Let it rest before dicing.
- In a large bowl, combine the mixed greens, tomatoes, cucumber, and cooked quinoa.
- Add the diced chicken to the salad.
- Drizzle with the light balsamic vinaigrette and toss well to combine.
- Divide into two portions and serve.
