Protein Malai Kulfi
A homemade take on the protein kulfi that went mainstream in India — reduced milk whisked with malai-flavoured whey and milk powder, frozen on sticks with zero added sugar. At 160 calories with 14g protein per kulfi, it's the rare frozen dessert you can justify on a fat-loss diet.
Ingredients
- 2 cups full-toned milk
- 1 scoop vanilla or malai whey protein
- 2 tbsp milk powder
- 1/4 tsp cardamom powder
- 1 tbsp chopped pistachios
- Stevia to taste
Instructions
- Simmer the milk with milk powder until reduced by a third.
- Cool completely, then whisk in the whey, cardamom, and stevia.
- Pour into kulfi moulds and add the pistachios.
- Freeze at least 6 hours before unmoulding.
