Protein Sprouts Bhel
Street-food bhel rebuilt around sprouted moong and peanuts, with puffed rice added last so it stays crunchy — part of the protein-chaat wave sweeping Indian snack menus. At 200 high-volume calories, it satisfies chaat cravings on a cut far better than the fried original.
Ingredients
- 1 cup sprouted moong
- 1/2 cup puffed rice or puffed quinoa
- 2 tbsp roasted peanuts
- 1 small onion, finely chopped
- 1 small tomato, chopped
- 1 tbsp tamarind chutney
- 1 tsp chaat masala
- 1 tbsp sev (light sprinkle)
Instructions
- Toss the sprouts with onion, tomato, and peanuts.
- Add the tamarind chutney and chaat masala and mix well.
- Fold in the puffed rice at the very end.
- Top with a light sprinkle of sev and eat immediately.
