Baked Cod Puttanesca
A cod fillet baked in a briny tomato sauce of olives, capers, and garlic until it flakes at a glance. Low-calorie, low-carb, and saucy enough to feel indulgent — ideal as a cutting-phase dinner.
Ingredients
- 180g cod fillet
- 1 can chopped tomatoes
- 8 olives, halved
- 1 tbsp capers
- 3 garlic cloves, sliced
- 1/2 tsp chili flakes
- 1 tbsp olive oil
- Fresh parsley
Instructions
- Simmer the garlic, tomatoes, olives, capers, and chili flakes into a loose sauce.
- Nestle the cod into the sauce in a baking dish.
- Bake at 200°C for 15-18 minutes until the fish flakes.
- Finish with olive oil and parsley.
