Hearty Vegan Lentil Stew
A comforting, high-fiber, and high-volume vegan stew that keeps you full for hours on very few calories.
Ingredients
- 1 cup dry lentils
- 4 cups vegetable broth
- 2 carrots, diced
- 2 stalks celery, diced
- 1 onion, chopped
- 1 can diced tomatoes
Instructions
- Sauté onions, carrots, and celery until soft.
- Add lentils, broth, and tomatoes.
- Bring to a boil, then simmer for 30 minutes until lentils are tender.
- Serve hot.
