Baked Salmon & Sweet Potato

Ingredients
- 6 oz salmon fillet
- 1 medium sweet potato, diced
- 1 cup asparagus spears
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt, pepper, and lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potato with half the olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.
- Place the salmon and asparagus on the same baking sheet. Drizzle with the remaining olive oil, garlic powder, salt, and pepper.
- Roast for another 10-12 minutes until the salmon is flaky and sweet potatoes are tender.
- Squeeze fresh lemon juice over the salmon and asparagus before serving.
