Grilled Halloumi & Quinoa Salad
Golden seared halloumi over lemony quinoa with rocket, mint, and pomegranate seeds — a vegetarian salad with genuine bite. Fat-leaning from the cheese with moderate carbs, it fits a maintenance or lower-carb lunch better than a strict cutting phase.
Ingredients
- 80g halloumi, sliced
- 1/3 cup cooked quinoa
- 2 cups rocket
- 2 tbsp pomegranate seeds
- 6 mint leaves, torn
- 1/2 lemon, juiced
- 1 tbsp olive oil
Instructions
- Sear the halloumi slices in a dry pan until deeply golden.
- Toss the quinoa, rocket, mint, and pomegranate with lemon and olive oil.
- Top the salad with the warm halloumi.
- Serve immediately while the cheese is soft.
