Light Egg Curry
Two boiled eggs halved into a light tomato-onion gravy with kasuri methi — the protein-first dinner curry that skips cream entirely. Low-carb and moderate-calorie, it's best as an easy maintenance dinner eaten without naan or rice.
Ingredients
- 2 eggs
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1 tsp garam masala
- 1 tsp kasuri methi
- 2 tsp oil
Instructions
- Hard-boil the eggs, peel, and halve them.
- Sauté the onion in oil, then add ginger-garlic paste and tomato puree.
- Cook into a light gravy with garam masala and a splash of water.
- Slide in the egg halves and simmer 3-4 minutes.
- Crush kasuri methi over the top before serving.
