Miso-Glazed Salmon with Bok Choy
Salmon lacquered with a sweet-savoury miso glaze and roasted alongside garlicky bok choy. Low-carb with generous omega-3 fats, it's a maintenance-day dinner that fits low-carb plans better than a post-workout window.
Ingredients
- 160g salmon fillet
- 1 tbsp white miso
- 1 tsp honey
- 1 tsp soy sauce
- 2 heads bok choy, halved
- 2 garlic cloves, sliced
- 1 tsp sesame oil
Instructions
- Whisk the miso, honey, and soy into a glaze and brush over the salmon.
- Roast at 200°C for 10-12 minutes until caramelised.
- Sear the bok choy cut-side down with garlic and sesame oil.
- Plate the salmon over the bok choy and spoon over any pan juices.
