Palak Paneer Power Bowl

Ingredients
- 300g fresh spinach, blanched and pureed
- 150g paneer, cubed
- 1 onion, finely chopped
- 1 tbsp ginger-garlic paste
- 2 tbsp low-fat cream
- 1 tsp cumin seeds
- 1/2 tsp garam masala
- 1 tsp kasuri methi (dried fenugreek)
- 1 tbsp oil
- Salt to taste
Instructions
- Blanch spinach in boiling water 1 minute; cool and blend smooth.
- Lightly pan-fry paneer cubes until golden; set aside.
- Heat oil; add cumin, then onion; sauté until golden.
- Add ginger-garlic paste and cook 2 minutes.
- Add spinach purée, salt, and garam masala; simmer 5 minutes.
- Fold in paneer and cream; cook 3 minutes.
- Crush kasuri methi between palms and stir through before serving.
