Roasted Pork Tenderloin & Apples
A savory and sweet dish that utilizes incredibly lean pork tenderloin for a massive protein hit.
Ingredients
- 1.5 lbs pork tenderloin
- 2 crisp apples (like Honeycrisp), sliced
- 1 large red onion, sliced
- 1 tbsp olive oil
- 1 tsp rosemary
- Salt and pepper
Instructions
- Preheat oven to 400°F (200°C).
- Rub the pork tenderloin with olive oil, rosemary, salt, and pepper.
- Place pork in the center of a roasting pan. Surround with sliced apples and onions.
- Roast for 25-30 minutes, until pork reaches an internal temperature of 145°F.
- Let pork rest for 5 minutes before slicing and serving with the roasted apples.
