Pulled Chicken & Sweet Potato Bowl
Paprika-spiced pulled chicken piled over roasted sweet potato cubes with charred corn and a lime-yogurt drizzle. High-carb with 38g protein, it's positioned as a post-training or muscle-gain dinner rather than a late low-carb meal.
Ingredients
- 170g chicken breast
- 1 large sweet potato, cubed
- 1/3 cup corn kernels
- 1 tsp smoked paprika
- 2 tbsp Greek yogurt
- 1/2 lime, juiced
- 1 tbsp olive oil
- Fresh coriander
Instructions
- Roast the sweet potato cubes in olive oil at 200°C for 25 minutes.
- Poach the chicken with paprika and salt, then shred it.
- Char the corn in a dry pan.
- Assemble the bowl and drizzle with lime-spiked yogurt.
- Finish with coriander.
