Sesame Soba Bowl with Edamame
Chilled buckwheat noodles tossed in a sesame-soy dressing with shelled edamame, cucumber ribbons, and nori — a vegan bowl with real plant protein from the soba and soybeans. Carb-forward at 400 calories, it works best as a post-training lunch for plant-based muscle-gain rather than a low-carb day.
Ingredients
- 80g soba noodles
- 3/4 cup shelled edamame
- 1/2 cucumber, ribboned
- 1 tbsp soy sauce
- 1 tbsp tahini or sesame paste
- 1 tsp rice vinegar
- 1 tsp sesame seeds
- 1 sheet nori, shredded
Instructions
- Cook the soba, rinse under cold water, and drain well.
- Boil the edamame 3 minutes and drain.
- Whisk the soy, sesame paste, and vinegar into a dressing.
- Toss the noodles, edamame, and cucumber in the dressing.
- Top with sesame seeds and nori.
