Steak with Chimichurri & Asparagus
A seared sirloin rested and sliced under a sharp parsley-garlic chimichurri, with blistered asparagus on the side. With 40g protein and almost no carbs, it's a low-carb muscle-support dinner best kept away from post-workout windows where carbs would serve you better.
Ingredients
- 180g sirloin steak
- 1 bunch asparagus, trimmed
- 1/2 cup parsley, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp chili flakes
Instructions
- Stir the parsley, garlic, oil, vinegar, and chili flakes into a chimichurri.
- Sear the steak 3-4 minutes per side and rest 5 minutes.
- Blister the asparagus in the same hot pan.
- Slice the steak and spoon the chimichurri over everything.
