Sweet Potato Black Bean Chili
A massive pot of high-fiber, vitamin-rich vegan chili that makes for fantastic leftovers.
Ingredients
- 2 large sweet potatoes, cubed
- 2 cans black beans, rinsed
- 1 can crushed tomatoes
- 1 large onion, diced
- 2 tbsp chili powder
- 2 cups vegetable broth
Instructions
- Sauté onion in a large pot until translucent.
- Add sweet potatoes, chili powder, tomatoes, beans, and broth.
- Bring to a simmer, cover, and cook for 35-40 minutes until sweet potatoes are tender.
- Serve hot with optional cilantro and avocado.
