Tofu Bhurji Vegan Bowl
Firm tofu crumbled and scrambled with turmeric, ginger, tomatoes, and garam masala in the style of paneer bhurji — a fully vegan, ultra-lean protein lunch. At 18g protein for only 190 calories with minimal carbs, it's the highest protein-to-calorie ratio available in vegan Indian cooking.
Ingredients
- 150g firm tofu, pressed and crumbled
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 tsp ginger, grated
- 1/2 tsp turmeric
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 1 tsp oil
- Salt and coriander
Instructions
- Press tofu firmly between paper towels to remove excess moisture.
- Crumble tofu into small pieces resembling scrambled eggs.
- Heat oil; splutter cumin, add onion and sauté until golden.
- Add ginger and tomato; cook until the tomato breaks down.
- Add turmeric and crumbled tofu; stir-fry on high heat 4 minutes.
- Season with garam masala and salt; garnish with coriander.
