  2. Crumble tofu into small pieces resembling scrambled eggs.
  3. Heat oil; splutter cumin, add onion and sauté until golden.
  4. Add ginger and tomato; cook until the tomato breaks down.
  5. Add turmeric and crumbled tofu; stir-fry on high heat 4 minutes.
  6. Season with garam masala and salt; garnish with coriander.
