Tofu Bhurji Vegan Cutting Bowl
Firm tofu scrambled with masala and a pinch of kala namak for that convincingly eggy note — the rising vegan answer to paneer bhurji with meaningfully fewer calories. Low-carb and just 190 calories for 18g protein, it's an obvious cutting-phase lunch pick.
Ingredients
- 200g firm tofu, pressed
- 1 small onion, chopped
- 1 small tomato, chopped
- 1/4 tsp turmeric
- 1/2 tsp cumin seeds
- 1/4 tsp kala namak (black salt)
- 2 tbsp coriander, chopped
Instructions
- Press the tofu 10 minutes to remove excess water.
- Temper cumin, then soften the onion and tomato.
- Crumble in the tofu with turmeric and cook 5 minutes.
- Season with kala namak off the heat for the eggy aroma.
- Shower with coriander and serve.
