Tuna Niçoise Salad
A composed plate of tuna, boiled egg, green beans, olives, and baby potatoes over crisp leaves with a mustardy vinaigrette. Low-carb, high-protein, and mostly vegetables by volume, it's a fat-loss lunch that still feels like proper French food.
Ingredients
- 1 can tuna in water, drained
- 1 egg, boiled and halved
- 100g green beans, blanched
- 4 baby potatoes, boiled and halved
- 6 olives
- 2 cups salad leaves
- 1 tbsp olive oil
- 1 tsp Dijon mustard
Instructions
- Boil the potatoes and egg; blanch the green beans.
- Whisk the olive oil, mustard, and a splash of vinegar into a dressing.
- Arrange the leaves, beans, potatoes, tuna, olives, and egg on a plate.
- Drizzle with the dressing and season with black pepper.
