Turkey Bolognese with Zucchini Noodles
A slow-simmered lean turkey ragù served over ribbons of just-softened zucchini instead of pasta. Low-carb, high-volume, and only 330 calories with 32g protein — ideal as a cutting-phase dinner that still delivers the bolognese experience.
Ingredients
- 160g turkey mince
- 2 zucchini, spiralised
- 1 can chopped tomatoes
- 1/2 onion, finely diced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tbsp olive oil
- 1 tbsp grated parmesan
Instructions
- Brown the turkey with onion and garlic in olive oil.
- Add the tomatoes and oregano and simmer 20 minutes.
- Toss the zucchini noodles in the sauce for 2 minutes — no longer.
- Serve with a light dusting of parmesan.
