Low-Carb Zucchini Lasagna
All the rich, cheesy goodness of lasagna without the heavy pasta carbs.
Ingredients
- 3 large zucchinis, sliced thin lengthwise
- 1 lb lean ground beef
- 2 cups marinara sauce
- 1 cup part-skim ricotta cheese
- 1 cup mozzarella
Instructions
- Salt zucchini slices and let sit for 15 mins to draw out moisture. Pat dry.
- Brown beef and mix with marinara.
- In a baking dish, layer meat sauce, zucchini slices, ricotta, and mozzarella.
- Bake at 375°F for 40 minutes.
