- Rinse the poha in a sieve until soft, then let it drain. Soak the soya granules in hot water for 10 minutes and squeeze them dry.
- Heat 1 tsp oil, add mustard seeds, curry leaves, green chilli and the peanuts. Add onion and cook until soft.
- Add the soya granules with a pinch of salt, haldi and red chilli, and stir-fry for 3โ4 minutes.
- Add peas and capsicum, then the poha, salt and a pinch of sugar if you like. Mix gently, cover for 2 minutes.
- Finish with lemon juice and coriander. Serve with a katori of curd for about 25 g protein in total.
